I'm wandering if it is possible to make the fields:

  • Start Date
  • Due Date

mandatory for user entry during item creation.

Yes, go to Customize -> Templates -> Process and select the template for your project. Now edit the screens for the process in question and click on the drop down next to each field in the create column to set required.
