Is there any documentation of how to change the look/template of gemini?

If you wish to change the theme for individual users you can do so by going to your profile (top right-hand corner) and selecting a theme from the list provided.

If you are talking about skinning the Gemini web application then you should probably wait for Gemini 5 which about to launch.
