How do you set the default status for a project in 3.1?

I have a workflow for the project and I want the first status in the workflow to be the only one available when you create an issue in this project.  I don't see how to configure this.

I can set it up so that once you have selected a status only certain statuses are available, but limiting the initial status is eluding me.

Any help is greatly appreciated!

You will have to select the default value for the status in the project administration -> default values screen. Then hide the status during issue creation using field visibility schemes.
