We do not have a document about this yet. It is included in the scheduler download and is configured within the same config file, which is quite clear.

It will listen to a specific mailbox and create issues in a the project specified using the priority, type etc... specified in the config file.

ok just so i'm clear, the issues that are created are in the same project, i.e. it can only create issues in a single project?

You can specify multiple mailboxes to listen to (it can be the same one email with filter on the subject) each will create an issue in a different project.
