When a client/user logs in to Gemini, Is it possible to configure them to only have access or visibility to there particular project?

Sure, the user will only see the projects s/he is allowed to see (as configured in the security scheme).

You can also set portal mode user group (General under security settings) so when these users log on they will be directed to the issues list and will not be able to see any other page (except view, create and edit).
